Mummy’s courgette and cherry tomato frittata goes down perfectly with a leafy salad for either, lunch, brunch or dinner! Tasty, healthy and a great alternative to anything meaty!
Ingredients:
- 5 eggs
- 10 courgettes
- 15-18 cherry tomatoes
- ½ Halloumi cut into small cubes
- 1 large onion, sliced
- 1 clove, grated
- 3 tbsp. milk
- Dry mint
- Salt and pepper to taste
Method:
- Slice courgettes thinly and roast them with spray oil. Cook for 45 min.
- At the same time cut the cherry tomatoes inn half and roast them in another baking tray until cooked.
- In the meantime, fry onion and garlic and leave to the side.
- When courgettes and tomatoes are cooked, combine them in an oblong Pyrex dish, add the onions and garlic then mix gently and add a pinch of mint.
- Beat the 5 eggs, add the milk and beat again then pour on top of the mixture.
- Sprinkle the chopped Halloumi evenly on top.
- Roast in the oven until eggs are set and cooked nicely browned all over for approx.: 30 min.
