Mummy’s courgette and cherry tomato frittata goes down perfectly with a leafy salad for either, lunch, brunch or dinner! Tasty, healthy and a great alternative to anything meaty!

Ingredients:

  • 5 eggs
  • 10 courgettes
  • 15-18 cherry tomatoes
  • ½ Halloumi cut into small cubes
  • 1 large onion, sliced
  • 1 clove, grated
  • 3 tbsp. milk
  • Dry mint
  • Salt and pepper to taste

Method:

  • Slice courgettes thinly and roast them with spray oil. Cook for 45 min.
  • At the same time cut the cherry tomatoes inn half and roast them in another baking tray until cooked.
  • In the meantime, fry onion and garlic and leave to the side.
  • When courgettes and tomatoes are cooked, combine them in an oblong Pyrex dish, add the onions and garlic then mix gently and add a pinch of mint.
  • Beat the 5 eggs, add the milk and beat again then pour on top of the mixture.
  • Sprinkle the chopped Halloumi evenly on top.
  • Roast in the oven until eggs are set and cooked nicely browned all over for approx.: 30 min.
