Rushed for time? Have guests in the afternoon? Want a homemade cheese pie? Try this one! My mum’s clever recipe really is perfect for the lazy house wife!

Ingredients

  • 1 packet of filo pastry (used for Paklava)
  • ½ packet melted unsalted butter (comes to over ½ glass)
  • 2 -3 tbsp. olive oil (add to the melted butter)
  • 400 gr. Feta cheese (plastic box of 400gr)
  • 1 tbsp. dried mint (optional)
  • 3 eggs
  • 3 tsp. heaped baking powder
  • 1 glass milk

 

Method

Mash the feta cheese unevenly with a fork and add dried mint (if desired) and divide into 3 portions. Brush butter on the bottom of an oblong tray. One by one lay sheets of buttered pastry, fit into the tray evenly.  You will need to fold over each sheet as it will be bigger than the tray – it is vital that each sheet has had butter brushed on to it.  After every 3-4 sheets of pastry add one portion of the Feta cheese.  Make sure that you top the last portion of Feta with whatever is left of your sheets of pastry (at least 3).

Take a sharp knife and shape portions into the pie so that it will be easier to cut after it is cooked. 

In a bowl, beat the eggs with the baking powder and add the milk, beat well and pour onto pie making sure that the liquid has sunk in evenly.

Bake in a hot oven 180 °c for about 45 minutes
