After posting on Instagram, I knew that Stephanie’s burgers had to make their way onto my kitchen table. Juicy, delicious and loved by the whole family they are great served with either rice, a jacket potato or bun! Green Monday next week so for those of you who are fasting, try them out before!

 

Jot it down:

Makes approx. 8 burgers

 

Ingredients:

  • 1 kg minced chicken breast
  • 3 tbsps. of oatmeal flakes
  • 2 eggs
  • 1 tsp mustard
  • ¼ bunch parsley, finely chopped
  • 1 large onion, finely chopped
  • 1 tbsp. mint leaves, finely chopped
  • 2 carrots, grated
  • 2 tomatoes, grated
  • 2 tbsps. olive oil
  • 1/2 cup milk
  • 1 tbsp. chicken stock
  • 2 cloves of garlic, grated
  • 1 tsp. sugar
  • cinnamon according to taste
  • salt according to taste
  • black pepper (optional)

 

Method

Put all the ingredients in a large bowl and mix well using your hands. If you like, you can add more herbs or some chilli or citrus zest to your burger mix. Divide the mixture into even portions and shape into burgers about 2cm thick. Place them on an oven tray and cook at 180 ° C for about 40 minutes.

Stephanie served her burgers with rice. Possibilities of how you serve yours are endless.
