Spinach rolls for today’s breakfast! So many Mediterranean flavors in just a bite… And so easy to make! The whole procedure takes approximately 1 hour and your little pumpkins will thank you for this one! It is suitable for babies over a year old since the crust might be a bit hard for them to bite and chew.

Ingredients for the dough

  • 2 cups all purpose flour
  • 1 1/3 tsp baking powder
  • 2 tbsp olive oil
  • 1/2 cup strained yogurt
  • 1/2 cup lukewarm water (check for the right consistency, you might need a bit more or less than written)

Ingredients for the filling

  • 5 bunches of spinach
  • 1 handful of dill
  • 2 small spring onions
  • 1 small piece of leek
  • 3/4 feta cheese

Method

In a bowl combine the flour, baking powder and olive oil. With your hands rub the 3 ingredients together until combined. Then add the yogurt, start kneading and continue by adding the water little by little until you get the right consistency. Let it rest for at least 15 minutes. Until your dough gets ready, start preparing your filling.

Finely chop the spinach, onion, leek and dill, put everything in a pan with some olive oil and sauté over a high heat for 3-4 minutes. Remove from the heat and add the feta cheese, cut in small pieces, mix them all together and that’s it.

Now pour some flour on the surface you’ll be working on and start rolling your dough. It shouldn’t be too thin neither too thick, make a big circular shape and cut it in the middle in order to create 2 long spinach rolls. Pour the mixture and roll it in the dough.

Bake for approximately 20 minutes (until golden) at 175 °C in a preheated oven. Let cool, cut your rolls and serve!
