Fasting? Want something sweet? Katerina’s Halva is as yummy as yummy can be now chocolatey delights are not in the picture!

Ingredients

¾ cup vegetable oil

2 cups semolina

½ cup white almonds (coarsely chopped)

2 cups caster sugar

5 cups water

2 cinnamon sticks

A pinch of cloves

 

Method:

Add the water, sugar, cinnamon sticks and cloves in a medium sized saucepan. Boil for approximately 5 minutes then lower the heat and simmer gently. Remove the cinnamon and cloves before pouring.

In another larger saucepan mix the oil, semolina and almonds and cook over medium to high heat stirring frequently to prevent sticking. Cook the mixture until the grains begin to toast and turn a deep golden colour.

Remove the pot from the heat and carefully add the hot syrup to the semolina mixture and continue to cook until the semolina starts to absorb all the liquid.

Pour the mixture into a pudding mould and allow it to cool to room temperature before serving.
