Cat’s perfectly light, potato salad is ideal for the warm weather lying ahead! It pretty much goes with anything really!

Feeds approx.: 6 – 8 people

Ingredients:

  • 1kg baby potatoes
  • 3 small shallots finely chopped
  • 1 handful of finely chopped parsley
  • 1 teaspoon Dijon mustard
  • 2 tablespoons white vinegar
  • 6 tablespoons olive oil
  • Salt & Pepper

 

Method:

Boil the potatoes in salted water until tender. Drain and let them cool for a bit. Whisk the vinegar with mustard and slowly add the olive oil. Mix until they all blend. Add shallots, parsley, salt and freshly ground pepper. Cut potatoes in half and add the vinaigrette.
