I named it “philadelphia stuffed omelette pizza” and trust me, it tastes as good as it looks! Many of you worry about the seasonings and wonder if it’s ok to give pepper, curry powder or even paprika to your little ones! The answer is yes, it’s more than fine! You can even add chilly powder in your toddler’s menu, it doesn’t mean that they’re going to like it, but there’s nothing wrong in putting it anyway! I have to be honest with you and confess that although I am “allowed to” I’ve never tried chilly powder in any of Marilyn’s meals.

Ingredients:

  • 2 eggs
  • 1 handful of spinach
  • 1/2 red pepper
  • 2 tbsp Philadelphia cream cheese
  • Seasonings: smoked paprika, garlic powder, onion powder, oregano and a bit of black pepper

Method:

Cut the spinach and pepper, sauté in a saucepan over a high heat for 3-4 minutes (place the peppers first and then add the spinach). In a bowl whisk the eggs and then add your veggies and seasonings, mix them all together and pour your mixture in the pan over a medium heat. Bake each side for 2-3 minutes. Once your omelette is ready, put it on a cutting board and fill it with cream cheese. Lastly, fold it in half and cut it in triangles and bon appetit!
