Not your ordinary veggie nuggets! Crunchy on the outside, moist on the inside and… absolutely yummy yummy ! They’re ready in less than 30 minutes; you only need 10 minutes to prepare and approximately 20 minutes cooking time.

Ingredients:

  • 1 large carrot
  • Half red pepper
  • Half ripe tomato
  • 3 tbsp. sweetcorn
  • 1 cup grated Edam cheese
  • 1/4 cup bread crumbs
  • 1 egg
  • Smoked paprika
  • Onion powder 
  • Oregano or Italian herbs
  • Onion powder

Method:

Start by cutting the veggies into equal pieces. Then, in a food processor shred the carrots and continue by adding ALL the other ingredients. Mix well until you get a moist texture. In a bowl, add your choice of seasoning to the breadcrumbs. Lastly, mould into a nugget shape and cover each one in breadcrumbs. Bake in the oven at 180c until they get a golden colour. Let cool, serve and enjoy with some yogurt on the side!
