We are definitely rice eaters in our house and we absolutely love this recipe. Crunchy, crispy and unbelievably tasty this pot rice can be eaten alone or served as a side dish. Nadia’s recipe really is a great alternative to just steamed rice.

Ingredients:

  • 1 Large mug basmati rice
  • 2-3 Tbsp. Butter
  • Hot water
  • Salt (quantity based on taste)

 

Method:

Place the rice in the pot and cover it with the hot water (level of the water should be well above the rice) add salt and slowly stir. Heat should be set to high. Place the pot on it and bring the rice to boil letting it simmer for approximately 5′-6′ or until the rice feels tender but NOT cooked. Once this is done, remove it from the heat and drain the water using a strainer. AT THIS POINT LOWER THE HEAT OF THE STOVE TO THE MINIMUM. Wipe the used pot so as to remove any rice residue and then add the butter. Return the pot back to the heat and let the butter melt slowly. When it’s melted remove it from the heat, put the rice back slowly smoothing and pressing it down lightly. When you finish, make a hole with a spoon in the middle reaching all the way to the bottom of the pot. Return it to the heat, cover it and let it cook for approximately 1-1.5 hrs. When it’s finished remove it from the heat and let it cool for about 15′-20′ before turning over onto a serving plate.
