My mother in law has mastered this authentic Greek dish. Her Fasolakia with pork fillet and potatoes go down a treat in our household and is a firm favourite with everyone! Beany, meaty, hearty! Check out our version.

Ingredients:
- 2 kilos green beans, top and tail broken off / 2 kilo frozen green beans.
- 3 pork fillets cut into thick like steak pieces
- 4 large peeled potatoes cut in half (8 pieces)
- 1 onion cut into half rings
- 1 tin of chopped tomatoes
- 1/3 of a glass sunflower oil
- Salt according to taste
- 5 glasses of water
Method:
Heat the oil and fry the meat to a heavily bottomed saucepan. When done, take out the meat and put aside. Sauté the potatoes then put those aside too. Fry the onion in the same saucepan until richly bronzed. Once ready, throw in the green beans, chopped tomatoes and pour in the water. Sprinkle some salt, stir well and bring up to a simmer for 5 minutes. Add the meat and leave to cook on medium heat for 20 minutes. Toss in the potatoes and cook for a further 10 minutes. If your beans are frozen follow the same procedure but cook on medium heat for 10 minutes and then add potatoes for a further 10 minutes. Serve with Greek yoghurt to thoroughly enjoy.
