This quick n’ easy, light, carb dish can be eaten alone or served as a side dish especially with pork schnitzel. Where possible use baby potatoes but small sized will do too.

  • Ingredients:
  • A kilo of potatoes
  • Finely chopped parsley
  • 3 Tbsp. Olive oil
  • Tbsp. Lemon Juice
  • 2 Tbsp. White wine vinegar
  • 1 Tbsp. White Sugar
  • 1 Tsp. English Mustard
  • Salt according to taste
  • Pepper according to taste

Boil potatoes, peel and chop into bite sized pieces. Shake the oil, lemon, vinegar, sugar, mustard, salt and pepper into a dressing and adapt according to taste. Pour the dressing into the chopped potatoes, mix and garnish with parsley.
