My bro- in-law did it again! He wow(ed) us with this burger and coleslaw delight. It really is a great alternative to a simple burger! Try it out!
Feeds approx.:8-10 people
Ingredients:
For the shredded meat:
- 1/4 cup brown sugar
- 1 tbsp. chili powder
- 1 tbsp. paprika
- 2 minced garlic cloves
- 2 tsp. salt
- 1 tsp. freshly ground black pepper
- 1 pork shoulder roast
- 4 onions, cut into halves
- 4 apples, cut in 4
- 1 bottle barbecue sauce
- 1 cup fresh orange juice
- hamburger rolls, for serving
For the coleslaw:
- 1/2 cup Greek yogurt
- 1/2 cup mayonnaise
- 2 tbsp. apple cider vinegar
- 1 tbsp. honey
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. Dijon mustard
- 1 x 500 gr. bag shredded coleslaw mix
Method for the shredded meat:
Mix all ingredients together apart from the onions, orange juice and BBQ sauce. Wrap the shoulder and refrigerate overnight. When ready to cook, put the onions in a pot, add the pork and the apples above the pork, pouring the orange juice over the top. Put in the oven at 150 ° for 7 hours covered. Uncover the last 30 min. Take out of the oven and let it cool for 20 minutes. Shred and add the BBQ sauce, mixed in with the melted onions and apples.
Method for the coleslaw:
Mix everything and refrigerate for 1 hour
