Ingredients:

  • 5 eggs
  • 1 cup of button mushrooms cut into small pieces  
  • 2 cups of chopped spinach
  • ½ cup of finely chopped spring onions
  • 1 cup of concentrated tomato juice
  • ½ cup of full fat milk
  • 1 cup of grated mozzarella cheese
  • 4 slices of toasted bread of your choice
  • tarragon
  • olive oil
  • salt and pepper according to taste

Method:

Throw the mushrooms, spinach and spring onions into a saucepan with a drop of oil. Add the tomato juice, salt, pepper and tarragon and cook for 10 minutes on low heat. Arrange the slices of toasted bread on a baking tray and cover with the cooked vegetables. Break the eggs evenly on top then sprinkle over the cheese. Add the milk and season with salt and pepper. Bake in the oven on 180 ° for 20 minutes or until egg whites set.
