An alternative version to the traditional Fajita mix! My children loved Cat’s recipe because it was flavourful and non-spicy!

Ingredients

  • 4 chicken breasts cut into thin strips
  • 2 red bell peppers, 2 orange bell peppers and 2 yellow bell peppers, sliced
  • 1 red onion, sliced
  • 5 tablespoons Teriyaki sauce
  • ½ sachet of Fajita ready seasoning
  • 2-3 tablespoons olive oil
  • 1 tablespoon honey
  • 100ml water

 

Method

Mix chicken strips with olive oil and place in a warmed up wok pan. Cook until the chicken brings out its own juice. Add peppers and onion and mix together carefully. Let them stew in the juice for 8-10 minutes on medium heat. Add Fajita mix, Teriyaki sauce and water. Let it stew for another 5 minutes and then add the honey. Lower the heat, cover the wok and let it cook for 20 minutes. Serve with fajita wraps, sour cream, guacamole, thinly cut lettuce and tomatoes. For extra taste you can add some fried bacon cubes.
