Apart from making a salad, what else can you do with leftover ‘Fasolia’ ( white boiled beans)?
The answer to that is burgers.
Ingredients:
- Leftover boiled Fasolia, potatoes and carrots
- ½ cup finely chopped parsley
- x1 finely chopped onion
- x1 Finely chopped clove garlic
- A grated tsp. fresh ginger
- 2/3 grated courgettes
- 1 packet feta cheese crumbled
- Salt and pepper to taste
- Olive oil spray
Method:
Fry the grated courgettes with some spray oil. Once cooked, squeeze out the excess water and put aside. Fry the onion, garlic, ginger and parsley. Once lightly cooked, mix with the cooked courgette. Add the fasolia, potato and carrot leftovers, crumbled feta cheese and mash to make a lumpy mixture. Mould into burgers and put into the oven at 180˚c for 30 minutes.
