Time to warm up with my mum’s cheesy, smoky extra!

Ingredients:
- A streaky bacon piece( approx. 10cm in thickness) chopped into small cubes
- 1 cauliflower chopped into pieces
- 1 large broccoli floret chopped into pieces
- 2 cups frozen peas
- grated Cheddar
- grated Edam
- grated Gruyere
Ingredients for white sauce:
- 3 cups milk
- flour
- butter
- ½ tsp. grated nutmeg
- 1 full tsp. English mustard
- Salt and pepper according to taste
Method:
- Cook both the cauliflower and broccoli in hot water for 3/4 minutes to blanch it and set aside.
- Boil the peas for 5 minutes and set aside.
- Fry the bacon until crisp and set aside.
- For the white sauce, melt the butter in a saucepan then lower the heat and add the flour making into a roux stirring vigorously. Add the milk gradually and increase the heat. Stir constantly until the sauce becomes smooth. Add the nutmeg, mustard, salt and pepper and stir until the sauce has thickened.
- Add all the ingredients together into an oblong Pyrex dish and pour the sauce generously over the vegetables, cheese and bacon.
- Cook until brown for approx. 45 minutes on 180˚
