What do you do with your leftover black-eyed beans? Simple, make a salad! This recipe is completely mine!
Ingredients:
- Boiled left over black-eyed beans
- Finely chopped coriander
- Finely chopped parsley
- Baby rocket
- Chopped green peppers
- Cherry tomatoes halved
- Salt
- Balsamic vinegar
- Olive oil
Method:
Mix all the ingredients together in a salad bowl. Drizzle oil and balsamic vinegar according to taste then add the salt.
