This is a great dinner party salad for any occasion but now the festivities have become it works alongside many main dishes. With a vibrant colour to it, this salad is easy to make and very tasty. Katerina thank you for the recipe.

Feeds approx.: 6-8 people

Ingredients:

  • 3 bags of pre washed baby spinach leaves
  • 1 piece of Parmesan cheese shaven into slices
  • 2 ripe avocados sliced into pieces
  • 20 strips of fresh bacon diced

 

For the dressing:

  • 1/4 cup of Dijon mustard
  • 1/4 cup of honey
  • 1/4 cup of white vinegar
  • 1 ½ tsp. salt
  • 1/8 cup of olive oil

 

Method:

Wash and dry spinach. As it dries dice the bacon into small pieces and fry in a non-stick pan until it becomes crispy. When the bacon cools down and the spinach is dry, mix all the ingredients together in a large salad bowl. Make the dressing separately and add when ready to serve.
