For salad lovers! This salad was tried and tested on a recent holiday in Greece. By no means Greek but truly tasty and different! I took a picture of it to remember the ingredients then adapted the recipe to whatever I had in the kitchen. It was just as delicious!

The original version
Jot it down:
Feeds approx.: 6 people
Ingredients:
- 1 head Romaine Lettuce finely chopped
 - ¾ cup of raisins
 - ½ cup of shaved Parmesan cheese
 - ½ croutons
 - ½ walnuts / pine nuts /sunflower seeds
 
For the dressing:
- 1/4 cup of Dijon mustard
 - 1/4 cup of honey
 - 1/4 cup of white vinegar
 - 1 ½ tsp. salt
 - 1/8 cup of olive oil
 
Method:
In a jar with a tight-fitting lid combine all the ingredients for the dressing; shake well and set aside. In a large salad bowl, combine all remaining ingredients. Chill until ready to serve. Just before serving, shake dressing. Pour over salad; sprinkle some Parmesan shavings on top.
