My summery salad that always goes down a treat. Perfectly refreshing and yogurty!

Jot it down:

Feeds approx.: 6 people

Ingredients:

  • 4 large cucumbers, slices
  • ½ cup of red onions, sliced
  • ½ cup of greek yogurt
  • 1 ½ lemons, juice and zest
  • 4 tablespoons thyme, chopped
  • Salt and pepper to taste
  • 1 clove garlic, grated (optional)

Method:

Mix everything and enjoy, it’s as simple as that!
