George always has a quick solution to easy cooking! Toss these ingredients together and put a cooked meal on the table in minutes. It’s about time we put our leftovers to good use!

Feeds approx.: 4-6 people
- 2 cups leftover chicken (preferably baked) cut into bite-size pieces
- 2 tbsp. olive oil
- 1 onion chopped
- 1 red bell pepper chopped
- 1 yellow bell pepper chopped
- 1 celery stalk chopped
- 1 garlic glove chopped
- 1 ½ cups basmati rice
- 1 tin chopped tomatoes
- 2 ½ cups chicken stock
- 1 bay leaf
- 1 tsp. turmeric powder
- 1 tsp. cumin powder
- ½ tsp. chilli powder
- Salt and pepper according to taste
Method
In a deep pan add the oil and fry the vegetables until they soften. Pour in the tomatoes and all the herbs and continue cooking for 5 minutes. Add the chicken, the rice, the stock, salt and pepper, cover and continue cooking on low until the rice is cooked (about 15 min.) Enjoy!!!
