Katerina, my best friend, is a perfectionist in all she does. When she decides to exercise her cooking skills she creates masterpieces that look and taste divine. Her Rice pudding is a refreshing delight and seen as it is still hot during the day, goes down a treat.

Jot it down:

Makes 6-7 regular sized coffee cups

 

 Ingredients:

  • 1-litre Fresh milk
  • 250 gr. Glutinous rice
  • 6 tbsp. Caster sugar
  • 2 tsp. Corn flour
  • 2 Cups of water
  • 1 Pinch of salt
  • 1 Sachet vanilla
  • Cinnamon

 

Place the water, rice and salt in a medium-sized pot and warm for about 15′ on medium heat stirring every now and then so the rice doesn’t stick to the bottom. Before adding the milk, take out 5 spoonfuls so you can dilute with the corn flour. Add milk, sugar and vanilla and continue cooking on medium heat for about 20′-25′ stirring every now and then and tasting the rice to be sure it’s cooked. Once cooked add the diluted corn flour and stir until the pudding has thickened and you see bubbles popping. Remove from heat and place in the prepared cups. Let it cool before adding the cinnamon.
