My gym instructor Elinos can’t get his head around the fact that I have a sweet tooth. Trying to find a solution to my problem he suggested I start making these oat pancakes to satisfy my cravings. This super easy, three ingredient base is ideal to add any topping to. Sticking to honey, fruit and cinnamon, I’m beginning to prefer them to my Cadbury’s dairy milk.

Jot it down:

For approx. 6 people

Ingredients:

• 250 gr. Oats
• X2 Ripe bananas
• X2 Egg whites
• Fry light Olive oil

Method:

Make your oat flour by adding the oats to the food processor and pulsing until a fine flour is formed. Liquidise the bananas, whisk the egg whites and mix all together in a bowl. If you don’t have a food processor mash and mix together. Heat frying pan, spray a little oil and cook like a pancake.
It is as simple as that.
