I might not be an expert in the kitchen but my salads are known to be on the good side. Anyone who knows me, knows I have a sweet tooth so no wonder this salad has a caramelised twist to it! Went down a treat with my guests the other night.

Feeds approx.: 5 – 8 people
- Ingredients:
- 2 Medium sized bags of pre washed mixed greens
- 1 Red pepper sliced into strips
- 1 Carrot sliced into thin slices
- 1 Small courgette sliced into thin slices
- 200 gr. Goats cheese
- 2/3 Tbsp. Dark brown sugar
- 1/3 Glass olive oil
- 1/3 Glass balsamic vinegar
- Salt according to taste
- Pepper according to taste
Method:
Roast vegetables in a shallow oven tray. Cook in a fan assisted oven at 185° till cooked through. Remove from the tray and leave aside to cool.
In the meantime, wash salad items, leave to drain and then place in a bowl. Add the roasted vegetables.
To prepare the goats cheese, heat a frying pan and add 1 tbsp. dark brown sugar, let it melt and place the goats cheese on top. When heated through, place one more tbsp. dark brown sugar into the frying pan and flip the goats cheese over. Work quickly not to destroy the shape of the cheese.
Crumble goats cheese onto the salad, add the dressing and toss all the ingredients together.
