Like ‘Fasolia’, these beans are made into a light, healthy salad. A well-loved dish amongst Mediterraneans.

Feeds approx.: 5 – 8 people

Ingredients:

  • 1 kilo Frozen beans/3 kilos fresh beans /2 cups dry beans
  • 1 Large courgette cut into cubes
  •  Chopped tomatoes
  •  Chopped cucumbers
  •  Finely chopped parsley
  •  Finely chopped spring onion/onion
  •  2 Tins of white meat tuna
  •  Black olives
  •  Salt
  •  Lemon
  •  Olive oil

Method:

Boil fresh, frozen or dry beans until soft. If beans are dry, change water once whilst on the boil. Meanwhile, boil courgette cubes, once cooked pour out their water and add them to the cooked beans. This ‘Louvia’ dish is ready to be served. Each person adds condiments to their taste. Olive oil, lemon and salt are a must!
